Ingredients
1 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup light brown sugar
1 egg yolk
2 teaspoons vanilla extract
2 cups all-purpose flour
2 tablespoons cornstarch
1/2 teaspoon salt
24 soft caramels, unwrapped
2 tablespoons heavy cream
3/4 cup semi-sweet chocolate chips
1 teaspoon flaky sea salt
Instructions
1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and creamy.
3. Mix in the egg yolk and vanilla extract until smooth.
4. Add the flour, cornstarch, and salt, then mix just until a soft dough forms.
5. Scoop and roll the dough into even balls, then place them on the prepared baking sheet.
6. Press your thumb or the back of a small spoon into the center of each dough ball to create a well.
7. Chill the tray for 15 minutes so the cookies keep their shape while baking.
8. Bake for 10 to 12 minutes, until the edges are lightly golden and the centers are set.
9. If the centers puff up, gently press them down again while the cookies are still warm.
10. Let the cookies cool completely on the baking sheet or a wire rack.
11. In a microwave-safe bowl, melt the caramels with the heavy cream in short intervals, stirring until smooth.

13. Melt the chocolate chips until smooth, then drizzle the chocolate over the cookies.
14. Sprinkle with flaky sea salt and let the tops set before serving.
