Ingredients

1 pound ground beef

4 cups cooked white rice

1/3 cup soy sauce

2 tablespoons brown sugar

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 tablespoon chili garlic sauce

1 red bell pepper, sliced

1 yellow bell pepper, sliced

4 green onions, sliced

1 tablespoon sesame seeds

4 large eggs

1 tablespoon neutral cooking oil

1/2 teaspoon black pepper


Instructions

1. Stir soy sauce, brown sugar, garlic, ginger, sesame oil, rice vinegar, chili garlic sauce, and black pepper together in a small bowl.

2. Heat neutral oil in a large skillet over medium-high heat, then add the ground beef and cook until browned, breaking it apart as it cooks.

3. Drain excess grease if needed, then pour the sauce over the beef and simmer for 3 to 4 minutes until glossy and slightly thickened.

4. Add the sliced bell peppers and cook for 2 to 3 minutes, keeping them slightly crisp.

5. Fry the eggs in a separate skillet until the whites are set and the yolks are still soft, or cook them to your preferred doneness.

6. Divide the cooked rice between 4 bowls, then spoon the saucy beef and peppers over the top.

7. Finish each bowl with a fried egg, sliced green onions, sesame seeds, and extra chili garlic sauce if desired.

Notes

Do not overcook the sauce after adding it to the beef. Let it simmer just until glossy and slightly thickened so the beef stays juicy and there is enough sauce to soak into the rice.
