Ingredients

1 pound ground chicken or ground turkey

1/2 cup breadcrumbs

1 large egg

1/3 cup grated Parmesan cheese

2 cloves garlic, minced

1/4 cup finely minced onion

2 tablespoons chopped fresh parsley

1 teaspoon Italian seasoning

1/2 teaspoon smoked paprika

3/4 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

4 ounces cream cheese, softened

1/2 cup sour cream or Greek yogurt

1 tablespoon lemon juice

2 tablespoons chopped chives or green onions

1 tablespoon chopped fresh dill or rosemary


Instructions

1. Add the softened cream cheese, sour cream or Greek yogurt, lemon juice, chives, dill or rosemary, a pinch of salt, and black pepper to a bowl. Stir until smooth, then refrigerate while preparing the bites.

2. In a large bowl, combine the ground chicken or turkey, breadcrumbs, egg, Parmesan, garlic, onion, parsley, Italian seasoning, smoked paprika, salt, and black pepper.

3. Mix gently just until combined. Do not overmix, or the bites may turn out dense.

4. Scoop the mixture into small portions and roll into mini meatballs.

5. Heat olive oil in a large skillet over medium heat.

6. Add the mini bites in a single layer and cook in batches if needed.

7. Turn the bites as they brown, cooking until golden on all sides and fully cooked in the center.

8. Spoon the creamy dip into small bowls or appetizer cups.

9. Serve the warm bites with the dip and garnish with extra herbs if desired.

Notes

Do not overmix the meat mixture. Stir only until the ingredients come together so the mini bites stay tender and juicy instead of firm or rubbery.
