Ingredients
2 pounds sweet potatoes, peeled and cubed
1 pound ground sausage
1 tablespoon olive oil
1 small yellow onion, diced
1 red bell pepper, diced
3 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
2 green onions, sliced
Instructions
1. Preheat the oven to 400°F and grease a 9×13-inch baking dish.
2. Add the cubed sweet potatoes to a large bowl with olive oil, smoked paprika, Italian seasoning, salt, and black pepper. Toss until evenly coated.
3. Spread the sweet potatoes in the baking dish and roast for 25 minutes, or until they begin to soften.
4. While the sweet potatoes roast, cook the sausage in a skillet over medium heat until browned and fully cooked. Drain excess grease.
5. Add the onion and red bell pepper to the skillet and cook for 4 to 5 minutes until softened.
6. Stir in the garlic and cook for 30 seconds, just until fragrant.
7. Remove the sweet potatoes from the oven and gently stir in the sausage, onion, pepper, and garlic mixture.
8. Sprinkle mozzarella and cheddar evenly over the top.
9. Bake for 12 to 15 minutes, or until the cheese is melted, bubbly, and lightly golden.
10. Let the casserole rest for 5 minutes, then garnish with green onions and serve warm.
Notes
Cut the sweet potatoes into evenly sized cubes so they cook at the same pace. Pieces that are too large may stay firm while smaller pieces become too soft.
