Description

This Strawberry Vanilla Cake is a soft, creamy, fruit-filled dessert that tastes like a bakery-style treat made right at home. Ingredients

2 1/2 cups all-purpose flour

2 1/2 teaspoons baking powder

1/2 teaspoon salt

3/4 cup unsalted butter, softened

1 3/4 cups granulated sugar

4 large eggs, room temperature

1 tablespoon vanilla extract

1 cup whole milk, room temperature

2 cups fresh strawberries, sliced

1/2 cup strawberry jam

8 ounces cream cheese, softened

2 cups heavy whipping cream, cold

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, for topping


Instructions

1. Preheat the oven to 350°F and grease two 9-inch round cake pans. Line the bottoms with parchment paper.

2. Whisk the flour, baking powder, and salt together in a bowl, then set aside.

3. Beat the softened butter and granulated sugar until pale, creamy, and fluffy.

4. Add the eggs one at a time, mixing well after each addition. Mix in the vanilla extract.

5. Add the dry ingredients in three additions, alternating with the milk. Mix just until combined.

6. Divide the batter evenly between the prepared pans and smooth the tops.

7. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.

8. Cool the cake layers in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

9. Beat the cream cheese until smooth, then add powdered sugar and vanilla extract.

10. Pour in the cold heavy whipping cream and beat until thick, fluffy, and spreadable.

11. Place one cake layer on a serving plate and spread strawberry jam over the top.

12. Add a layer of whipped cream frosting, then arrange sliced strawberries over it.

13. Place the second cake layer on top and frost the top and sides with the remaining whipped cream frosting.

14. Decorate with fresh strawberries and chill for at least 30 minutes before slicing.

Notes

Do not assemble the cake while the layers are warm. Warm cake will melt the whipped cream frosting and make the strawberry filling slide, so let the layers cool completely before filling and decorating.
