Description

Strawberry Flaky Puff Pastry is a crisp, buttery, bakery-style dessert filled with sweet strawberries and smooth cream cheese filling. Ingredients

1 sheet puff pastry, thawed

2 cups fresh strawberries, sliced

4 ounces cream cheese, softened

1/3 cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon lemon juice

2 tablespoons granulated sugar

1 tablespoon cornstarch

2 tablespoons strawberry jam

1 egg

1 tablespoon water

2 tablespoons powdered sugar, for dusting

Fresh mint, optional garnish


Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper.

2. Roll the thawed puff pastry gently on a lightly floured surface and cut it into 16 even rectangles.

3. Place the pastry rectangles on the prepared baking sheet. Whisk the egg with water, then brush the tops lightly with egg wash.

4. Bake for 14 to 17 minutes, or until the pastry is puffed, crisp, and golden brown. Let the pieces cool completely.

5. Add strawberries, granulated sugar, lemon juice, strawberry jam, and cornstarch to a small saucepan. Cook over medium heat for 5 to 7 minutes, stirring often, until glossy and thickened. Cool completely.

6. Beat the cream cheese, powdered sugar, and vanilla until smooth and fluffy.

7. Split the cooled pastry pieces or use one piece as the bottom and one as the top. Spread or pipe cream filling onto half of the pastry pieces.

8. Spoon cooled strawberry filling over the cream layer.

9. Top with the remaining pastry pieces, dust with powdered sugar, and garnish with mint if desired. Serve soon after assembling.

Notes

Do not assemble the pastries while the strawberry filling is warm. Warm filling can melt the cream and soften the puff pastry, so let both the pastry and fruit filling cool completely before layering.
