Ingredients

1 cup unsalted butter, softened

1 1/2 cups granulated sugar

1 large egg

2 teaspoons vanilla extract

1/4 teaspoon almond extract

2 3/4 cups all-purpose flour

1 tablespoon cornstarch

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, softened, for frosting

2 1/2 cups powdered sugar

2 tablespoons heavy cream or milk

1 teaspoon vanilla extract, for frosting

1 pinch salt, for frosting

2 drops food coloring, optional

1/3 cup rainbow sprinkles


Instructions

1. Beat the softened butter and granulated sugar together until light and fluffy.

2. Mix in the egg, vanilla extract, and almond extract until smooth.

3. Whisk the flour, cornstarch, baking powder, baking soda, and salt in a separate bowl.

4. Add the dry ingredients to the wet ingredients and mix on low until a soft dough forms.

5. Cover and chill the dough for 30 minutes.

6. Preheat the oven to 350°F and line baking sheets with parchment paper.

7. Scoop the dough into 18 even balls and place them on the prepared baking sheets.

8. Bake for 10 to 12 minutes, until the edges are set and the centers look pale and slightly puffed.

9. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

10. Beat the frosting butter until creamy, then add powdered sugar, cream or milk, vanilla, salt, and food coloring if using.

11. Spread frosting over each cooled cookie and top with sprinkles right away.

12. Let the frosting set slightly before serving or storing.

Notes

Do not overbake these cookies. Pull them from the oven when the centers still look pale and soft, because they will continue setting as they cool.
