Description

These Raspberry Lemonade Bars are bright, buttery, sweet-tart dessert bars with a creamy lemon filling and juicy raspberry topping. Ingredients

1 cup all-purpose flour

1/4 cup granulated sugar

1/4 teaspoon salt

1/2 cup unsalted butter, softened

2 large eggs

1 can sweetened condensed milk

1/2 cup fresh lemon juice

1 tablespoon lemon zest

1 1/2 cups raspberries, fresh or frozen

1/4 cup granulated sugar

1 tablespoon cornstarch

1 tablespoon water

2 tablespoons powdered sugar, optional for serving


Instructions

1. Preheat the oven to 350°F and line an 8-inch square baking pan with parchment paper.

2. Mix the flour, granulated sugar, salt, and softened butter until crumbly. Press firmly into the prepared pan.

3. Bake the crust for 15 minutes, or until lightly golden around the edges.

4. Whisk the eggs, sweetened condensed milk, lemon juice, and lemon zest until smooth. Pour over the warm crust.

5. In a small saucepan, cook the raspberries, sugar, cornstarch, and water over medium heat until thickened and jammy.

6. Spoon the raspberry mixture over the lemon filling and gently swirl with a knife.

7. Bake for 22 to 26 minutes, or until the center is just set with a slight jiggle.

8. Cool completely at room temperature, then refrigerate for at least 2 hours.

9. Lift from the pan, slice into bars, and dust with powdered sugar before serving if desired.

Notes

Do not slice the bars while warm. Chilling is what helps the lemon filling set properly and keeps the raspberry topping from smearing into messy cuts.
