Description

Ranch Garlic Parm Chicken Skewers are juicy, buttery, and packed with bold ranch, garlic, and Parmesan flavor in every bite. This easy recipe is perfect for a quick dinner, summer grilling, party appetizer, meal prep protein, or simple chicken dinner idea when you want something savory, golden, and satisfying without a lot of work.


Ingredients

1 1/2 pounds boneless skinless chicken breasts, cut into bite-size chunks

2 tablespoons olive oil

1 tablespoon lemon juice

2 tablespoons ranch seasoning

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon paprika

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes

4 tablespoons unsalted butter, melted

3 cloves garlic, minced

2 tablespoons chopped fresh parsley

8 wooden or metal skewers


Instructions

1. Soak wooden skewers in water for 30 minutes if using wooden skewers.

2. Add chicken pieces to a large bowl with olive oil, lemon juice, ranch seasoning, 1/4 cup Parmesan, Italian seasoning, paprika, black pepper, and red pepper flakes.

3. Toss until the chicken is evenly coated, then let it rest for 10 minutes.

4. In a small bowl, mix melted butter, minced garlic, remaining Parmesan, and parsley.

5. Thread the seasoned chicken pieces onto skewers, leaving a little space between each piece.

6. Preheat a grill or grill pan to medium-high heat.

7. Cook the skewers for 10 to 14 minutes, turning every few minutes, until browned and cooked through.

8. Brush the skewers with garlic Parmesan butter during the final few minutes of cooking.

9. Transfer to a platter, brush with more garlic Parmesan butter, and rest for 5 minutes before serving.

Notes

Do not pack the chicken pieces too tightly on the skewers. Leaving a little space helps the chicken brown properly instead of steaming, which gives you juicier skewers with better flavor.
