No-Fry Crispy Baked Chicken Tacos

Ingredients

2 cups cooked shredded chicken

12 small corn tortillas

1 cup shredded Mexican blend cheese

2 tablespoons taco seasoning

1/3 cup salsa or red enchilada sauce

1 tablespoon lime juice

1 tablespoon olive oil or cooking spray

1 cup shredded lettuce

1 avocado diced or mashed

1/4 cup sour cream or Mexican crema

2 tablespoons chopped cilantro

2 tablespoons sliced green onions

Hot sauce to taste


Instructions

1. Preheat the oven to 425°F and line a large baking sheet with parchment paper. Lightly brush or spray the parchment with oil.

2. In a mixing bowl, combine the shredded chicken, taco seasoning, salsa or enchilada sauce, lime juice, and half of the shredded cheese.

3. Warm the tortillas in a damp paper towel for about 30 seconds, or until flexible enough to fold without cracking.

4. Place the tortillas on the prepared baking sheet. Add a little cheese to one side of each tortilla, then spoon the chicken filling over the cheese.

5. Fold each tortilla over the filling and press gently. Brush or spray the tops with oil.

6. Bake for 8 minutes, then carefully flip the tacos and bake for another 5 to 7 minutes, or until golden and crispy.

7. Let the tacos rest for 2 minutes, then top with lettuce, avocado, crema, cilantro, green onions, and hot sauce.

8. Serve warm while the shells are crispy.

Notes

Do not overfill the tortillas or add too much sauce to the chicken mixture. A wet or heavy filling can keep the shells from crisping and may cause the tacos to split while baking.
