Description

This Ninja Creami Lemon Cheesecake Protein Ice Cream is a creamy, tangy, high-protein frozen dessert that tastes like lemon cheesecake in scoopable form. It is an easy recipe for a healthy snack, quick dessert, post-workout treat, summer food idea, and simple protein ice cream made with Greek yogurt, cream cheese, lemon, and vanilla protein.


Ingredients

1 cup vanilla protein shake

1 scoop vanilla protein powder

2 tablespoons cream cheese, softened

1/3 cup plain Greek yogurt

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

1 tablespoon instant cheesecake pudding mix

1 to 2 tablespoons sweetener of choice

1/2 teaspoon vanilla extract

2 tablespoons graham cracker crumbs

1 tablespoon milk or protein shake, for re-spin if needed


Instructions

1. Add vanilla protein shake, vanilla protein powder, softened cream cheese, Greek yogurt, lemon juice, lemon zest, cheesecake pudding mix, sweetener, and vanilla extract to a blender.

2. Blend until completely smooth and creamy with no cream cheese pieces remaining.

3. Pour the mixture into a Ninja Creami pint container, staying below the max fill line.

4. Place the lid on the pint and freeze on a level surface for at least 24 hours.

5. Remove the frozen pint from the freezer and process on the Lite Ice Cream setting.

6. If the mixture looks crumbly, add 1 tablespoon milk or protein shake and use the Re-Spin function.

7. Once creamy, add graham cracker crumbs and either fold them in by hand or use the Mix-In setting.

8. Serve immediately with extra lemon zest or graham cracker crumbs if desired.

Notes

Do not skip the full 24-hour freeze. If the base is not frozen solid, the Ninja Creami may not process it correctly and the texture can turn icy or uneven.
