Ingredients

1 cup unsalted butter, melted

1 cup granulated sugar

1 cup all-purpose flour

1/2 teaspoon salt

1/4 teaspoon baking powder

4 ounces cream cheese, softened

2 cups powdered sugar

1/2 teaspoon peppermint extract

2 drops green gel food coloring, optional

1 cup semi-sweet chocolate chips

1/2 cup heavy cream


Instructions

1. Preheat the oven to 350°F and line an 8-inch square baking pan with parchment paper.

2. In a large bowl, whisk the melted butter, granulated sugar, and brown sugar until smooth.

3. Add the eggs and vanilla extract, then whisk until glossy and fully combined.

4. Stir in the cocoa powder, flour, salt, and baking powder just until no dry streaks remain.

5. Spread the brownie batter evenly into the prepared pan.

6. Bake for 28 to 32 minutes, or until the edges are set and the center looks just baked.

7. Let the brownies cool completely in the pan.

8. Beat the softened cream cheese until smooth, then mix in powdered sugar, peppermint extract, and green food coloring if using.

9. Spread the mint filling evenly over the cooled brownie base.

10. Refrigerate for 30 minutes, or until the mint layer feels firm.

11. Place the chocolate chips in a heatproof bowl, then warm the heavy cream until steaming but not boiling.

12. Pour the warm cream over the chocolate chips and let it sit for 2 minutes.

13. Stir until the chocolate topping is smooth and glossy.

14. Spread the chocolate topping over the chilled mint layer.

15. Refrigerate for at least 1 hour before slicing into bars.

Notes

Do not spread the mint filling over warm brownies. The brownie base must be completely cool, or the mint layer can melt and become messy instead of setting into a clean creamy layer.
