Ingredients
1 cup quinoa
2 cups water or chicken broth
2 boneless skinless chicken breasts
2 tablespoons olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 cucumber, chopped
1 cup cherry tomatoes, halved
1/4 red onion, thinly sliced
1/2 cup Kalamata olives
1/2 cup crumbled feta cheese
2 tablespoons fresh parsley, chopped
1/2 cup plain Greek yogurt or tzatziki, optional
Instructions
1. Rinse the quinoa well under cold water, then cook it in water or chicken broth until tender and fluffy. Let it rest for a few minutes, then fluff with a fork.
2. In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and black pepper. Coat the chicken well with the mixture.
3. Heat a skillet over medium-high heat and cook the chicken until golden brown and fully cooked through. Remove it from the pan and let it rest for several minutes.
4. Chop the cucumber, halve the cherry tomatoes, thinly slice the red onion, and prepare the olives, feta, and parsley.
5. Slice the rested chicken into bite-sized pieces.
6. Divide the quinoa between serving bowls, then top with chicken, cucumber, tomatoes, red onion, olives, and feta.
7. Finish with fresh parsley and add Greek yogurt or tzatziki if using. Serve immediately.
Notes
Do not slice the chicken right after cooking, or the juices will run out and the meat can turn dry instead of staying tender.
