Ingredients

14 ounces extra-firm tofu, pressed and cubed

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon soy sauce or tamari

1 teaspoon Dijon mustard

1 teaspoon dried oregano

2 tablespoons fresh parsley, chopped

1 tablespoon fresh dill or basil, chopped

1 tablespoon cornstarch

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes, optional

1/4 teaspoon salt, adjust to taste


Instructions

1. Preheat the oven to 425°F and line a baking sheet with parchment paper.

2. Drain and press the tofu to remove excess moisture, then cut it into even cubes.

3. In a large bowl, whisk together lemon juice, lemon zest, olive oil, garlic, soy sauce or tamari, Dijon mustard, oregano, black pepper, red pepper flakes, and salt.

4. Add the tofu cubes to the marinade and gently toss until coated. Let the tofu rest for 20 minutes.

5. Sprinkle cornstarch over the tofu and toss gently until the cubes are lightly coated.

6. Arrange the tofu in a single layer on the prepared baking sheet, leaving space between each cube.

7. Bake for 25 to 30 minutes, flipping halfway through, until golden and lightly crisp on the edges.

8. Sprinkle with fresh parsley and dill or basil before serving, then finish with extra lemon juice if desired.

Notes

Do not skip pressing the tofu. Extra moisture keeps the cubes from browning well and can make the finished tofu soft instead of golden and lightly crisp.
