Ingredients
1 cup cottage cheese

1 pinch salt
1/4 cup whipped cream
1 tablespoon graham cracker crumbs
2 lemon slices
2 fresh mint leaves
Instructions
1. Add the cottage cheese, Greek yogurt, lemon juice, lemon zest, honey, vanilla extract, and salt to a blender or food processor.
2. Blend until completely smooth, scraping down the sides as needed.
3. Taste and adjust with a little extra lemon juice or honey if desired.
4. Gently fold in the whipped cream for a lighter mousse texture.
5. Spoon the mousse into 4 small serving cups.
6. Chill for at least 1 hour before serving.
7. Top with graham cracker crumbs, lemon slices, and fresh mint.
Notes
