Ingredients
1 lb large shrimp, peeled and deveined
1 cup walnuts
1/3 cup cornstarch
1 egg white
1/4 teaspoon salt
1/4 teaspoon white pepper
1/3 cup mayonnaise
3 tablespoons honey
2 tablespoons sweetened condensed milk
1 teaspoon lemon juice
2 cups neutral oil, for frying
1 tablespoon sliced green onion or chopped parsley
1 teaspoon sesame seeds, optional
Instructions
1. Toast the walnuts in a dry skillet for 2 to 3 minutes until fragrant, then set them aside to cool.
2. In a small bowl, whisk together mayonnaise, honey, sweetened condensed milk, and lemon juice until smooth.
3. Pat the shrimp very dry, then season with salt and white pepper.
4. Toss the shrimp with egg white, then coat evenly with cornstarch.
5. Heat oil in a skillet over medium-high heat and fry the shrimp in batches for 2 to 3 minutes, or until crisp and cooked through.
6. Transfer the shrimp to a bowl and gently toss with the honey sauce.
7. Fold in the walnuts, garnish with green onion or parsley and sesame seeds, then serve immediately.
Notes
Do not sauce the shrimp too early. Toss the shrimp with the honey sauce right before serving so the coating stays lightly crisp instead of turning soft.
