Greek Tzatziki Chicken Salad is a quick lunch, easy dinner, and fresh meal-prep favorite made with tender chicken, creamy Greek yogurt, crisp cucumber, lemon, dill, and garlic. Ingredients
2 cups cooked chicken, chopped or shredded
3/4 cup Greek yogurt
1 cup cucumber, diced
2 tablespoons lemon juice
1 clove garlic, minced
2 tablespoons fresh dill, chopped
2 tablespoons chives or green onion, sliced
1/4 cup red onion, thinly sliced
1/3 cup Kalamata olives, sliced
1 tablespoon olive oil
1/4 cup feta cheese, crumbled
1/2 teaspoon salt
1/4 teaspoon black pepper
4 slices rustic bread or 4 pita halves, for serving
Instructions
1. Place the cooked chicken in a large mixing bowl and let it cool completely if still warm.
2. Dice the cucumber and pat it dry with paper towels to remove excess moisture.
3. In a separate bowl, stir together the Greek yogurt, lemon juice, garlic, dill, chives or green onion, olive oil, salt, and black pepper until smooth.
4. Add the cucumber, red onion, olives, and chicken to the dressing, then fold gently until evenly coated.
5. Stir in the crumbled feta last so it keeps some texture throughout the salad.
6. Cover and chill for at least 20 minutes so the flavors can blend.
7. Serve on toasted rustic bread, in pita, in lettuce cups, or over greens.
Notes
Do not skip drying the cucumber well, or the salad can become watery and thin after chilling.
