Description

This Gluten-Free Chocolate Mug Cake is a quick dessert made for serious chocolate cravings, with a soft, fudgy center and rich cocoa flavor in every bite. It is an easy recipe for a single-serving dessert, a quick snack, late-night food idea, gluten-free treat, or simple chocolate cake you can make in minutes without turning on the oven.


Ingredients

4 tablespoons gluten-free all-purpose flour

2 tablespoons unsweetened cocoa powder

2 tablespoons granulated sugar

1/4 teaspoon baking powder

1 pinch salt

3 tablespoons milk

1 tablespoon neutral oil

1/4 teaspoon vanilla extract

1 tablespoon chocolate chips

1 tablespoon whipped cream, optional for topping


Instructions

1. Add the gluten-free flour, cocoa powder, sugar, baking powder, and salt to a microwave-safe mug.

2. Stir the dry ingredients well so the cocoa powder and baking powder are evenly mixed.

3. Add the milk, oil, and vanilla extract.

4. Stir until the batter is smooth, scraping the bottom and sides of the mug to remove dry pockets.

5. Fold in the chocolate chips and sprinkle a few extra on top if desired.

6. Microwave for 60 to 75 seconds, or until the cake is puffed and mostly set on top.

7. Let the mug cake rest for 1 minute before serving.

8. Top with whipped cream if desired and enjoy warm.

Notes

Do not overcook the mug cake. Stop microwaving when the top looks mostly set but the center still looks slightly soft, because it will continue to firm up as it rests.
