Ingredients
1 bag frozen hash browns
4 tablespoons butter
1 small onion, chopped
3 cloves garlic, minced
4 cups chicken broth
1 can cream of chicken soup
2 cups milk
1 cup sour cream
2 cups shredded cheddar cheese
8 slices bacon, cooked and crumbled
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped chives
Instructions
1. Melt the butter in a large pot over medium heat, then cook the chopped onion until soft.
2. Stir in the garlic and cook for a short moment until fragrant.
3. Add the chicken broth and cream of chicken soup, stirring until smooth.
4. Mix in the frozen hash browns and bring the soup to a gentle simmer.
5. Cook until the potatoes are tender and the soup begins to thicken.
6. Stir in the milk, sour cream, and shredded cheddar cheese over low heat.
7. Add most of the crumbled bacon, then season with salt and black pepper.
8. Ladle into bowls and top with the remaining bacon and chopped chives before serving.
Notes
Do not boil the soup after adding the milk, sour cream, and cheese, or the texture can turn grainy instead of smooth and creamy.
