Ingredients
1 can chickpeas, drained and rinsed
1 cup creamy peanut butter
1/3 cup maple syrup
1 large egg
2 teaspoons vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips
Instructions
1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
2. Pat the chickpeas dry, then add them to a food processor with the peanut butter, maple syrup, egg, vanilla extract, baking soda, and salt.
3. Blend until the mixture is completely smooth and thick, stopping to scrape down the sides as needed.
4. Stir in the chocolate chips, saving a few for the tops if desired.
5. Scoop the dough onto the prepared baking sheet and gently flatten each cookie slightly.
6. Bake for 10 to 12 minutes, or until the edges are lightly golden and the tops are set.
7. Let the cookies cool on the pan for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
Do not skip drying the chickpeas well before blending, or the dough can turn too wet and the cookies may bake up softer than expected.
