Ingredients

1 1/2 pounds boneless skinless chicken breast or thighs

3 tablespoons olive oil

2 tablespoons lemon juice

3 cloves garlic, minced

2 teaspoons smoked paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon chili flakes, optional

4 large pita breads

1 1/2 cups shredded lettuce

1 cup sliced cucumber

1 cup cherry tomatoes, halved

1/3 cup thinly sliced red onion

1 cup Greek yogurt

1/2 cup grated cucumber, squeezed dry

1 tablespoon lemon juice

1 clove garlic, finely grated

2 tablespoons chopped fresh dill

1 tablespoon chopped fresh parsley

1/4 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Add the chicken to a bowl with olive oil, lemon juice, minced garlic, smoked paprika, cumin, oregano, salt, black pepper, and chili flakes if using. Toss until fully coated.

2. Let the chicken rest for 10 minutes while preparing the sauce and vegetables.

3. In a small bowl, stir together Greek yogurt, grated cucumber, lemon juice, grated garlic, dill, parsley, salt, and black pepper until creamy.

4. Heat a skillet or grill pan over medium-high heat. Cook the chicken for 5 to 7 minutes per side, or until golden and cooked through.

5. Transfer the chicken to a cutting board and rest for 5 minutes, then slice into strips or bite-sized pieces.

6. Warm the pita breads in a dry skillet or microwave until soft and flexible.

7. Fill each pita with shredded lettuce, sliced cucumber, tomatoes, red onion, and warm chicken.

8. Spoon the creamy herb sauce over the chicken and serve immediately with extra lemon or herbs if desired.

Notes

Do not slice the chicken immediately after cooking. Letting it rest for a few minutes keeps it juicy and prevents the pita filling from becoming dry.
