Description

This Easy Spinach & Cottage Cheese Breakfast Casserole is a cozy, protein-packed breakfast bake with fluffy eggs, creamy cottage cheese, tender spinach, and golden melted cheese in every slice. Ingredients

6 large eggs

1 1/2 cups cottage cheese

4 cups fresh spinach, chopped

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

1/2 cup milk

3 green onions, sliced

2 cloves garlic, minced

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon dried oregano

1/4 teaspoon red pepper flakes

2 tablespoons fresh parsley or chives, chopped


Instructions

1. Preheat the oven to 375°F and grease an 8×8-inch or similar baking dish.

2. Heat olive oil in a skillet over medium heat. Add garlic and green onions, then cook for 1 minute until fragrant.

3. Add chopped spinach and cook until wilted. Remove from heat and let it cool slightly.

4. In a large bowl, whisk eggs, cottage cheese, milk, salt, black pepper, oregano, and red pepper flakes.

5. Fold in mozzarella cheese, feta cheese, and the cooked spinach mixture.

6. Pour the mixture into the prepared baking dish and spread it evenly.

7. Bake for 30 to 35 minutes, or until the center is set and the top is golden.

8. Let the casserole rest for 10 minutes before slicing.

9. Garnish with parsley or chives and serve warm.

Notes

Do not add wet spinach directly to the egg mixture. Cook it first and let excess moisture evaporate so the casserole sets properly instead of turning watery.
