Ingredients

1 1/2 pounds boneless skinless chicken breasts, cut into even pieces

1 1/2 pounds baby potatoes, cut into bite-size pieces

1 bunch fresh asparagus, trimmed

1 cup cherry tomatoes

4 tablespoons olive oil, divided

4 cloves garlic, minced

3/4 cup grated Parmesan cheese, divided

2 teaspoons Italian seasoning

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley

1 tablespoon lemon juice, optional


Instructions

1. Preheat the oven to 425°F and line a large sheet pan with parchment paper.

2. Toss the potatoes with half of the olive oil, half of the garlic, Italian seasoning, paprika, salt, pepper, and part of the Parmesan.

3. Spread the potatoes on the sheet pan and roast for 15 minutes.

4. Pat the chicken dry, then toss it with the remaining olive oil, garlic, seasoning, and Parmesan.

5. Remove the pan from the oven and add the chicken, asparagus, and cherry tomatoes around the potatoes.

6. Roast for 18 to 22 minutes, or until the chicken reaches 165°F and the potatoes are tender.

7. Sprinkle with parsley and finish with lemon juice before serving.

Notes

Cut the potatoes small and even so they finish cooking at the same time as the chicken. Large potato pieces may stay firm while the chicken becomes overcooked.
