Description

This Easy Salsa Chicken Crock Pot is a juicy, creamy, flavor-packed slow cooker dinner made with tender shredded chicken, salsa, black beans, corn, warm taco spices, and melted cheese. Ingredients

2 pounds boneless skinless chicken breasts

2 cups chunky salsa

1 can black beans, drained and rinsed

1 cup frozen corn

2 tablespoons taco seasoning

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

4 ounces cream cheese, softened

1 cup shredded Mexican cheese blend

1 tablespoon fresh lime juice

2 tablespoons chopped fresh cilantro

1 cup pico de gallo or diced tomatoes, for topping


Instructions

1. Place the chicken breasts in the bottom of the crock pot in an even layer.

2. Pour the salsa over the chicken, then add the black beans and corn around the chicken.

3. Sprinkle taco seasoning, cumin, smoked paprika, garlic powder, and onion powder over the top.

4. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the chicken is fully cooked and easy to shred.

5. Shred the chicken with two forks, then stir it back into the salsa mixture.

6. Add the softened cream cheese and stir until melted and creamy.

7. Stir in the shredded Mexican cheese blend until melted.

8. Finish with lime juice and cilantro.

9. Serve warm with pico de gallo over rice, in tortillas, on nachos, or in taco bowls.

Notes

Avoid overcooking the chicken after it is already tender, especially when using chicken breasts. Once it shreds easily, finish the sauce and serve so the chicken stays juicy instead of dry.
