Ingredients
4 large bagels
6 large eggs
1/2 cup cottage cheese
1/2 cup shredded cheddar cheese
1/3 cup cooked crumbled bacon
1/4 cup milk
2 tablespoons chopped green onions
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon everything bagel seasoning
1 tablespoon chopped fresh parsley
1 tablespoon melted butter or cooking spray
Instructions
1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
2. Slice the bagels in half and gently press down the soft centers to create wells for the filling.
3. Arrange the bagel halves cut-side up on the prepared baking sheet.
4. In a mixing bowl, whisk the eggs, milk, cottage cheese, garlic powder, salt, and black pepper until combined.
5. Stir in the cheddar cheese, cooked bacon, and green onions.
