Ingredients

1 1/2 pounds boneless skinless chicken thighs

1 cup pineapple juice

1/3 cup low-sodium soy sauce

1/4 cup brown sugar

2 tablespoons honey

4 cloves garlic minced

1 tablespoon fresh ginger grated

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon cornstarch

2 tablespoons water

1 tablespoon olive oil

1 1/2 cups jasmine rice

1 cup full-fat coconut milk

1 cup chicken broth

1/2 teaspoon salt

1/3 cup sliced green onions

1 tablespoon sesame seeds

2 tablespoons chopped cilantro or parsley

1 small red chili thinly sliced optional

1 lime cut into wedges


Instructions

1. Add the chicken, pineapple juice, soy sauce, brown sugar, honey, garlic, ginger, rice vinegar, and sesame oil to a bowl. Toss well, cover, and marinate for at least 20 minutes.

2. Rinse the jasmine rice until the water runs mostly clear. Add rice, coconut milk, chicken broth, and salt to a saucepan.

3. Bring the rice to a gentle simmer, cover, reduce the heat to low, and cook for 15 minutes. Remove from heat and let it rest covered for 10 minutes, then fluff with a fork.

4. Remove the chicken from the marinade and reserve the marinade for the glaze.

5. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 5 to 7 minutes per side, or until browned and cooked through.

6. Transfer the chicken to a plate and let it rest.

7. Pour the reserved marinade into the skillet and bring it to a simmer. Stir cornstarch and water together, then add it to the sauce.

8. Simmer the sauce for 2 to 3 minutes, stirring often, until thick and glossy.

9. Return the chicken to the skillet and spoon the Hawaiian glaze over the top.

10. Serve the chicken over coconut rice with green onions, sesame seeds, cilantro or parsley, sliced chili if using, and fresh lime wedges.

Notes

Do not boil the coconut rice too aggressively. Keep it at a gentle simmer and let it rest covered after cooking so the rice turns fluffy instead of sticky or scorched.
