1 pound ground beef

1 cup long grain white rice

1 red bell pepper, diced

1 can diced tomatoes

2 cups beef broth

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Heat the olive oil in a large skillet over medium heat.

2. Add the diced onion and red bell pepper, then cook until softened.

3. Stir in the minced garlic and cook briefly until fragrant.

4. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.

5. Season the beef mixture with paprika, Italian seasoning, salt, and black pepper.

6. Stir in the uncooked rice, diced tomatoes, and beef broth until well combined.

7. Bring the mixture to a gentle simmer, then reduce the heat to low and cover the skillet.

8. Cook until the rice is tender and the liquid is mostly absorbed.
