Ingredients
2 large heads cauliflower, cut into florets
3 tablespoons olive oil
1 medium yellow onion, diced
4 cloves garlic, minced
4 cups vegetable broth
1 cup heavy cream

1 teaspoon fresh thyme leaves
1 bay leaf
1 tablespoon lemon juice
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes
2 tablespoons fresh parsley, chopped
4 slices crusty bread, for serving
Instructions
1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
2. Toss cauliflower florets with 2 tablespoons olive oil, salt, and black pepper, then spread them in a single layer.
3. Roast for 25 minutes, until tender with golden brown edges. Reserve a few roasted florets for topping.
4. Heat the remaining olive oil in a large pot over medium heat, then sauté the onion for 5 minutes until softened.
5. Add the garlic and cook for 1 minute, stirring until fragrant.
6. Add the roasted cauliflower, vegetable broth, thyme, and bay leaf. Bring to a gentle boil.
7. Reduce the heat and simmer for 15 minutes so the flavors can blend. Remove the bay leaf.
8. Blend the soup with an immersion blender until smooth, or carefully blend in batches.
9. Stir in the heavy cream, Parmesan cheese, and lemon juice. Warm gently without boiling.
10. Taste and adjust seasoning, then serve topped with reserved roasted cauliflower, parsley, red pepper flakes, and crusty bread.
Notes
Do not boil the soup after adding the cream and Parmesan, because high heat can cause the dairy to separate and make the texture less smooth.
