Description

These Cucumber Bites with Cream Cheese Filling are a fresh, creamy, no-cook appetizer made with soft bread, crisp cucumber, lemony herb cream cheese, and a pretty dill garnish. Ingredients

8 slices soft white sandwich bread

1 large English cucumber, thinly sliced

8 ounces cream cheese, softened

2 tablespoons sour cream or plain Greek yogurt

1 tablespoon fresh dill, finely chopped

1 tablespoon fresh chives, finely chopped

1 teaspoon lemon juice

1 teaspoon lemon zest

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika

8 small fresh dill sprigs, for garnish


Instructions

1. Wash and dry the cucumber, then slice it into thin rounds. Place the slices on paper towels and pat them dry.

2. Add the softened cream cheese, sour cream or Greek yogurt, dill, chives, lemon juice, lemon zest, garlic powder, salt, and black pepper to a bowl.

3. Mix until the filling is smooth, creamy, and easy to spread.

4. Trim the crusts from the sandwich bread for a clean appetizer-style look.

5. Spread the cream cheese filling evenly over one side of each bread slice.

6. Arrange cucumber slices over half of the bread slices, slightly overlapping them.

7. Top with the remaining bread slices, cream cheese side down, and press gently.

8. Cut each sandwich into small triangles or squares.

9. Sprinkle the tops with paprika and a little extra black pepper.

10. Garnish with fresh dill sprigs and serve chilled.

Notes

Pat the cucumber slices very dry before assembling. Skipping this step can make the bread soggy and cause the filling to loosen too quickly.
