Ingredients

15 ounces pumpkin puree

3 large eggs

12 ounces evaporated milk

1/2 cup brown sugar

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 1/2 teaspoons ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1/2 teaspoon salt

Whipped cream for serving


Instructions

1. Preheat oven to 350°F and lightly grease a 9-inch pie dish.

2. In a large bowl, whisk together pumpkin puree, eggs, evaporated milk, vanilla, brown sugar, and granulated sugar.

3. Add cinnamon, nutmeg, ginger, cloves, and salt. Mix until smooth.

4. Pour the mixture into the prepared pie dish.

5. Bake for 45 to 50 minutes or until the center is nearly set.

6. Remove from oven and cool completely.

7. Refrigerate for at least 2 hours before serving.

8. Slice and top with whipped cream if desired.

Notes

Avoid overbaking the pie. The center should still have a slight jiggle when removed from the oven to ensure a smooth, creamy texture after cooling.
