Description
This Crock-Pot Chili Dog Casserole is a cozy, cheesy, family-friendly easy dinner that brings together smoky hot dogs, hearty chili, crispy-style tater tots, and melty cheese in one slow cooker meal. Ingredients
1 bag frozen tater tots
8 beef hot dogs, sliced
2 cans prepared chili
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 small onion, diced
1 can diced tomatoes with green chiles, drained
1 tablespoon yellow mustard
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 cup sour cream, for topping
1/4 cup sliced green onions, for topping
Instructions
1. Lightly grease the inside of a 6-quart slow cooker with nonstick spray.
2. Spread the frozen tater tots evenly across the bottom of the slow cooker.
3. Scatter the sliced hot dogs over the tater tots.
4. In a bowl, stir together the chili, diced onion, diced tomatoes with green chiles, yellow mustard, garlic powder, and smoked paprika.
5. Spoon the chili mixture evenly over the hot dogs and tater tots.
6. Cover and cook on low for 4 hours, or until the casserole is hot and bubbling.
7. Sprinkle the cheddar cheese and Monterey Jack cheese over the top.
8. Cover again and cook for 15 to 20 minutes, until the cheese is fully melted.
9. Serve warm with sour cream and sliced green onions on top.
Notes
Do not lift the slow cooker lid repeatedly while the casserole cooks. Each time the lid is opened, heat escapes and the cooking time can increase, which may leave the potatoes less tender.
