Ingredients
8 oz cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1 tsp cotton candy flavoring
1/2 cup heavy whipping cream
2 drops pink food coloring
2 drops blue food coloring
1/2 cup graham cracker crumbs
1 cup all-purpose flour
2 large eggs, beaten
1 1/2 cups panko breadcrumbs
1/2 cup sweetened shredded coconut
3 cups vegetable oil, for frying
1/4 cup melted chocolate
2 tbsp powdered sugar, for garnish
2 tbsp pastel candy sprinkles
Instructions
1. Beat the softened cream cheese until smooth, then mix in the powdered sugar, vanilla extract, and cotton candy flavoring.
2. In a separate bowl, whip the heavy cream until soft peaks form, then fold it into the cream cheese mixture until light and fluffy.
3. Divide the filling into three portions. Leave one plain, tint one pink, and tint one blue, then gently swirl them together for a cotton candy look.
4. Fold in the graham cracker crumbs, scoop the mixture into small balls, and place them on a parchment-lined tray.
5. Freeze the cheesecake balls until very firm, about 1 to 2 hours.
6. Set up a breading station with flour in one bowl, beaten eggs in another, and panko mixed with shredded coconut in a third bowl.
7. Roll each frozen cheesecake ball in flour, dip in egg, and coat well in the panko mixture. Repeat the egg and crumb coating once more for a thicker crust.
8. Freeze the coated bombs again for 20 to 30 minutes so they stay firm.
9. Heat the vegetable oil in a deep pan, then fry the bombs in small batches until golden brown and crisp.
10. Transfer to paper towels briefly, then drizzle with melted chocolate, dust with powdered sugar, and finish with pastel candy sprinkles before serving.
Notes
Do not skip the freezing steps, because soft cheesecake filling can leak during frying and prevent the bombs from holding their shape.
