Description

Ingredients

1 cup small-curd cottage cheese

1/4 cup grated Parmesan cheese

1 large egg white

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon Italian seasoning

1/4 teaspoon black pepper

1/8 teaspoon red pepper flakes

1 tablespoon chopped fresh chives or parsley

1 teaspoon cooking spray


Instructions

1. Preheat the oven to 375°F and line a large baking sheet with parchment paper.

2. Drain the cottage cheese well using a fine-mesh strainer or paper towels to remove excess moisture.

3. In a bowl, mix cottage cheese, Parmesan, egg white, garlic powder, onion powder, Italian seasoning, black pepper, and red pepper flakes until combined.

4. Spoon small mounds of the mixture onto the prepared baking sheet, leaving space between each one.

5. Flatten each mound into a thin round so the chips can crisp evenly.

6. Bake for 22 to 28 minutes, or until the edges are deeply golden and the centers are set.

7. Let the chips cool on the baking sheet for 5 to 10 minutes so they firm up.

8. Lift gently with a thin spatula, garnish with chives or parsley, and serve with your favorite dip.

Notes

Do not skip draining the cottage cheese. Extra moisture is the biggest reason the chips turn soft instead of crisp.
