Description

Crispy Asparagus Asiago Spears are a quick appetizer, easy side dish, and fresh vegetable snack with golden panko crumbs, nutty Asiago cheese, garlic seasoning, and tender asparagus inside. Ingredients

1 pound fresh asparagus spears, trimmed

1/2 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

3/4 cup finely grated Asiago cheese

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon smoked paprika

1/4 teaspoon black pepper

1/4 teaspoon salt

Olive oil spray, as needed

2 tablespoons chopped fresh parsley

1 lemon, cut into wedges


Instructions

1. Preheat the oven to 425°F and line a large baking sheet with parchment paper.

2. Rinse the asparagus, trim the woody ends, and pat the spears completely dry.

3. Place the flour in one shallow bowl. Beat the eggs in a second shallow bowl.

4. In a third bowl, mix the panko breadcrumbs, Asiago cheese, Parmesan cheese, garlic powder, Italian seasoning, smoked paprika, black pepper, and salt.

5. Dip each asparagus spear into the flour, then the beaten egg, then the cheesy breadcrumb mixture, pressing gently so the coating sticks.

6. Arrange the coated asparagus spears on the prepared baking sheet in a single layer with space between each spear.

7. Lightly spray the tops with olive oil spray.

8. Bake for 12 to 15 minutes, turning once halfway through, until the coating is golden and the asparagus is tender-crisp.

9. Sprinkle with fresh parsley and serve warm with lemon wedges.

Notes

Make sure the asparagus is completely dry before coating it. Extra moisture can make the breadcrumbs slide off and keep the spears from crisping properly.
