Ingredients

1 1/2 pounds boneless skinless chicken breasts

2 cups cooked white rice

2 tablespoons olive oil

2 tablespoons butter

1 small yellow onion, finely diced

3 cloves garlic, minced

2 tablespoons all-purpose flour

1 1/2 cups chicken broth

1 cup heavy cream

4 ounces cream cheese, softened

1/2 cup grated Parmesan cheese

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley


Instructions

1. Pat the chicken dry and season both sides with paprika, garlic powder, onion powder, Italian seasoning, salt, and black pepper.

2. Heat olive oil in a large skillet over medium-high heat, then sear the chicken for 3 to 4 minutes per side until golden. Remove the chicken to a plate.

3. Reduce the heat to medium, add butter, and cook the diced onion for 3 minutes until softened. Stir in the garlic and cook for 30 seconds.

4. Sprinkle flour over the onion and garlic, stirring for 1 minute to remove the raw flour taste.

5. Slowly pour in the chicken broth while stirring, then add the heavy cream and softened cream cheese. Stir until the sauce is smooth.

6. Return the chicken to the skillet, reduce the heat to low, cover, and simmer for 10 to 12 minutes until the chicken is fully cooked.

7. Stir in Parmesan cheese until melted and the sauce is creamy. Taste and adjust seasoning if needed.

8. Spoon cooked rice onto plates or bowls, top with the smothered chicken, and ladle the creamy sauce over everything. Garnish with fresh parsley.

Notes

Do not boil the cream sauce aggressively after adding the dairy. Keep it at a gentle simmer so the sauce stays smooth and the chicken remains tender.
