Ingredients

1 lb ground beef

4 large flour tortillas

2 tbsp butter

2 cloves garlic, minced

1 tbsp chopped fresh parsley

1 tsp Dijon mustard

1/2 tsp Worcestershire sauce

1/2 tsp paprika

1/2 tsp onion powder

1/4 tsp crushed red pepper flakes

1/2 tsp salt

1/4 tsp black pepper

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/4 cup diced onions, optional

2 tbsp sliced jalapeños, optional

2 tbsp chopped pickles, optional


Instructions

1. In a small bowl, mix the butter, garlic, parsley, Dijon mustard, Worcestershire sauce, paprika, onion powder, crushed red pepper flakes, salt, and black pepper until well combined.

2. Divide the ground beef into 4 equal portions and gently spread each portion into a thin layer over one side of each tortilla.

3. Heat a large skillet over medium-high heat and place one tortilla beef-side down into the hot skillet. Cook until the beef is browned and cooked through.

4. Flip the tortilla so the beef side faces up, then spread some of the cowboy butter mixture over the hot beef.

5. Top with cheddar cheese, Monterey Jack cheese, and any optional onions, jalapeños, or pickles.

6. Fold the tortilla in half and cook until the outside is golden and crisp and the cheese has fully melted.

7. Flip once more if needed to toast the second side evenly.

8. Remove from the skillet, rest briefly, then slice into wedges and serve hot.

Notes

Do not overload the tortillas with too much filling, or they can tear and become difficult to flip neatly in the skillet.
