Ingredients
3 cups all-purpose flour

1 cup crushed pineapple with juice
2 teaspoons vanilla extract
1 cup sweetened shredded coconut
1 cup chopped pecans
8 ounces cream cheese softened

3 cups powdered sugar
1 teaspoon vanilla extract for frosting
2 tablespoons heavy cream or milk
1/2 cup toasted coconut for topping
1/2 cup pecan halves for topping
Instructions
1. Preheat the oven to 350°F and grease and flour a 10 to 12 cup bundt pan very well.
2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, cinnamon, and salt.
3. In a separate bowl, whisk the eggs, vegetable oil, mashed bananas, crushed pineapple with juice, and vanilla extract until combined.
4. Pour the wet mixture into the dry ingredients and stir gently until no dry streaks remain.
5. Fold in the shredded coconut and chopped pecans until evenly distributed.
6. Spoon the batter into the prepared bundt pan and smooth the top.

Notes
