Ingredients
2 1/2 cups sweetened shredded coconut
3/4 cup sweetened condensed milk
1 teaspoon vanilla extract
1/4 teaspoon almond extract
18 whole almonds
1/4 teaspoon salt
1 cup extra sweetened shredded coconut for rolling
Instructions
1. In a medium bowl, mix 2 1/2 cups sweetened shredded coconut, sweetened condensed milk, vanilla extract, almond extract, and salt until a thick mixture forms.
2. Cover the bowl and chill the mixture in the refrigerator for 20 to 30 minutes until easier to handle.
3. Scoop about 1 tablespoon of the mixture and flatten it gently in your palm.
4. Place 1 whole almond in the center of each portion, then wrap the coconut mixture around it and roll into a ball.
5. Roll each truffle in the extra shredded coconut until fully coated.
6. Arrange the truffles on a tray or plate and refrigerate for another 20 to 30 minutes until firm.
7. Serve chilled or store in an airtight container in the refrigerator.
Notes
Do not skip chilling the mixture before rolling, or the truffles can become too sticky and hard to shape neatly.
