Description
This Cinnamon Roll Poke Cake is a soft, gooey, cinnamon-sugar dessert that tastes like a bakery cinnamon roll in easy cake form. Made with a tender yellow cake base, buttery cinnamon filling, sweet condensed milk, and creamy cream cheese glaze, this easy dessert recipe is perfect for potlucks, brunch ideas, holiday food ideas, birthday treats, and simple make-ahead desserts.
Ingredients
1 box yellow cake mix
3 large eggs
1/2 cup vegetable oil
1 cup milk
1 cup brown sugar
2 teaspoons ground cinnamon
1/2 cup unsalted butter, melted
1 can sweetened condensed milk
8 ounces cream cheese, softened
2 cups powdered sugar
1 teaspoon vanilla extract
3 tablespoons heavy cream
Instructions
1. Preheat the oven to 350°F and grease a 9×13-inch baking dish.
2. Prepare the cake batter with the yellow cake mix, eggs, oil, and milk until smooth.
3. Pour the batter into the prepared baking dish and bake for 28 to 32 minutes, or until the center is set.
4. Let the cake cool for about 10 minutes, then poke holes all over the top using the handle of a wooden spoon.
5. Mix the melted butter, brown sugar, cinnamon, and sweetened condensed milk until smooth.
6. Pour the cinnamon filling evenly over the warm cake, letting it sink into the holes.
7. Beat the cream cheese until smooth, then mix in powdered sugar, vanilla extract, and heavy cream until creamy.
8. Spread or drizzle the glaze over the cake.
9. Chill for cleaner slices or serve slightly warm for a gooey cinnamon roll texture.
Notes
Do not poke the holes too close together or pour the filling over an underbaked cake, because that can make the cake too wet instead of soft and gooey.
