Description

Chicken Rogan Josh is a bold, cozy chicken dinner with tender pieces of chicken simmered in a rich tomato-yogurt sauce filled with warm spices, garlic, ginger, and deep savory flavor. This easy recipe is perfect for dinner ideas, comfort food nights, family meals, and flavorful food ideas when you want something saucy, aromatic, and satisfying with rice or naan.

Ingredients

2 pounds boneless chicken thighs, cut into bite-size pieces

1 cup plain full-fat yogurt

2 tablespoons neutral oil or ghee

1 large onion, finely chopped

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 cup crushed tomatoes or tomato puree

1/2 cup water or chicken stock

2 teaspoons Kashmiri chili powder

2 teaspoons ground coriander

1 teaspoon ground cumin

1/2 teaspoon turmeric

1 teaspoon garam masala

4 green cardamom pods

1 cinnamon stick

1 bay leaf

1 1/2 teaspoons salt, or to taste

2 tablespoons fresh cilantro or mint, chopped

Instructions

1. Mix chicken with yogurt, half the garlic, half the ginger, turmeric, chili powder, and a pinch of salt. Let it marinate for at least 20 minutes.

2. Heat oil or ghee in a large skillet or Dutch oven over medium heat. Add cardamom pods, cinnamon stick, and bay leaf, then cook until fragrant.

3. Add chopped onion and cook until softened and golden around the edges.

4. Stir in the remaining garlic and ginger, then add coriander, cumin, and more chili powder. Cook for 1 minute while stirring.

5. Add crushed tomatoes or tomato puree and cook until the sauce darkens slightly and thickens.

6. Lower the heat and add the marinated chicken. Stir until the chicken is fully coated in the sauce.

7. Pour in water or chicken stock, cover partially, and simmer for 20 to 25 minutes, or until the chicken is tender and cooked through.

8. Stir in garam masala, taste for salt, and simmer uncovered for a few more minutes if you want a thicker sauce.

9. Remove the cinnamon stick and bay leaf, garnish with cilantro or mint, and serve warm with rice or naan.

Notes

Avoid adding the yogurt-marinated chicken to a very hot, boiling sauce. Lower the heat first and stir well so the yogurt blends smoothly instead of turning grainy.
