Description

Candy Cane Brownie Bombs are a festive holiday dessert with a fudgy brownie shell, creamy cheesecake-style filling, white chocolate drizzle, and crushed peppermint candy on top. Ingredients

1 box fudgy brownie mix, baked according to package directions

8 ounces cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1/4 teaspoon peppermint extract

1/8 teaspoon salt

1 cup white chocolate chips

2 tablespoons heavy cream

1 teaspoon coconut oil or shortening

1/2 cup crushed candy canes


Instructions

1. Bake the brownies according to the package directions, then let them cool completely.

2. Trim away dry edges if needed, then crumble the soft brownie pieces into a large bowl.

3. Beat the cream cheese, powdered sugar, vanilla extract, peppermint extract, and salt until smooth and thick.

4. Scoop small portions of the filling onto a parchment-lined tray and chill for 20 minutes, or until firm enough to handle.

5. Flatten a spoonful of brownie mixture in your palm, place one chilled filling portion in the center, and wrap the brownie around it.

6. Roll gently into a ball or dome, then place on a parchment-lined tray.

7. Chill the shaped brownie bombs for 30 minutes, or until firm.

8. Melt the white chocolate chips with heavy cream and coconut oil, stirring until smooth.

9. Spoon or drizzle the melted white chocolate over the chilled brownie bombs.

10. Sprinkle crushed candy canes over the top while the white chocolate is still soft.

11. Let the coating set, then serve chilled.

Notes

Do not shape the brownie bombs while the brownies or filling are warm. Warm brownies become sticky, and soft filling can leak out before the bombs have time to firm up.
