Ingredients

1 pound peeled and deveined shrimp

2 refrigerated pie crusts

3 tablespoons butter

1 small yellow onion, diced

1 small green bell pepper, diced

1 celery stalk, diced

3 cloves garlic, minced

2 teaspoons Cajun seasoning

3 tablespoons all-purpose flour

1 cup chicken broth

3/4 cup heavy cream

4 ounces cream cheese, softened

1 cup shredded cheddar cheese

2 green onions, sliced

2 tablespoons fresh parsley, chopped

1 large egg, beaten

1 tablespoon water

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Preheat the oven to 400°F and fit one pie crust into a deep 9-inch pie dish. Keep the second crust chilled.

2. Melt butter in a large skillet over medium heat, then add onion, bell pepper, and celery. Cook for 5 minutes, stirring often, until softened.

3. Add garlic and cook for 30 seconds until fragrant.

4. Stir in Cajun seasoning and flour until the vegetables are coated. Cook for 1 minute.

5. Slowly pour in chicken broth while stirring, then add heavy cream and cream cheese. Stir until smooth and thickened.

6. Add shrimp and cook for 2 to 3 minutes, just until the shrimp start to turn pink.

7. Stir in cheddar cheese, green onions, parsley, salt, and black pepper. Remove from heat and let the filling cool for 5 to 10 minutes.

8. Spoon the filling into the prepared pie crust. Cover with the second crust, seal the edges, and cut small slits in the top.

9. Whisk the beaten egg with water, then brush it over the top crust.

10. Bake for 30 to 35 minutes, or until the crust is golden and the filling is bubbling.

11. Let the pie rest for 10 to 15 minutes before slicing and serving.

Notes

Do not overcook the shrimp in the skillet before baking. They only need to start turning pink because they will finish cooking inside the pie, and this keeps them tender instead of rubbery.
