Description
Best Hashbrown Casserole is a creamy, cheesy, golden-baked comfort food dish that belongs on every breakfast, brunch, holiday, and easy dinner table. Made with tender shredded potatoes, sour cream, cheddar cheese, and a crisp buttery topping, this easy recipe is perfect for breakfast ideas, potluck food ideas, family dinner ideas, and make-ahead side dishes.
Ingredients
30 ounces frozen shredded hashbrowns, thawed
2 cups shredded cheddar cheese
1 cup sour cream
10.5 ounces cream of chicken soup
1/2 cup unsalted butter, melted and divided
1/2 cup finely diced onion
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
2 cups crushed cornflakes or buttery crackers
2 tablespoons fresh parsley, chopped
Instructions
1. Preheat the oven to 350°F and grease a 9×13-inch baking dish.
2. Place the thawed hashbrowns in a large bowl and blot away extra moisture.
3. In a separate bowl, stir together sour cream, cream of chicken soup, half of the melted butter, onion, garlic powder, salt, and black pepper.
4. Fold in the hashbrowns and shredded cheddar cheese until evenly coated.
5. Spread the mixture into the prepared baking dish in an even layer.
6. Mix the crushed cornflakes or crackers with the remaining melted butter.
7. Sprinkle the buttery topping evenly over the casserole.
8. Bake for 45 to 50 minutes, until hot, bubbling around the edges, and golden on top.
9. Let the casserole rest for 5 to 10 minutes before serving.
10. Garnish with fresh parsley and serve warm.
Notes
Avoid adding frozen hashbrowns directly to the casserole. Thaw and dry them first so the filling stays creamy instead of watery.
