Ingredients

2 cups cooked chicken breast, diced

2 cups broccoli florets, blanched

12 oz pasta (penne or rigatoni), cooked al dente

1 ½ cups heavy cream

2 tablespoons butter

3 cloves garlic, minced

1 cup grated Parmesan cheese

1 ½ cups shredded mozzarella cheese

1 tablespoon olive oil

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons fresh parsley, chopped (optional)


Instructions

1. Bring a large pot of salted water to a boil and cook the pasta until al dente. Drain and set aside.

2. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then sauté until golden and cooked through. Set aside.

3. In the same pot used for the pasta, blanch broccoli florets in boiling water for 1-2 minutes. Transfer to an ice bath to stop the cooking.

4. In a saucepan, melt butter and sauté garlic until fragrant. Add heavy cream and bring to a simmer. Stir in Parmesan cheese until the sauce thickens.

5. In a large bowl, mix together pasta, chicken, broccoli, and Alfredo sauce until fully coated.

6. Pour mixture into a greased baking dish. Top with mozzarella cheese and bake at 375°F (190°C) for 20-25 minutes or until bubbly and golden.

7. Garnish with fresh parsley and serve hot.

Notes

Use rotisserie chicken for a quick-prep version.

Add a splash of pasta water to Alfredo sauce if it thickens too much.

You can freeze this bake before or after baking; just be sure it’s tightly wrapped.
