Ingredients

200g pasta (fettuccine or penne)

2 tablespoons butter

3 cloves garlic, minced

2 tablespoons all-purpose flour

1.5 cups milk

0.5 cup heavy cream (optional)

0.75 cup grated Parmesan cheese

0.5 teaspoon salt

0.25 teaspoon black pepper

0.25 teaspoon chili flakes (optional)

2 chicken breasts, grilled and sliced

1 tablespoon chopped parsley


Instructions

1. Season the chicken breasts with olive oil, salt, pepper, and any preferred spices. Grill until golden and cooked through. Slice and set aside.

2. Cook pasta in salted boiling water until al dente. Drain and set aside.

3. In a large pan, melt butter over medium heat. Add minced garlic and sauté until fragrant.

4. Stir in the flour and cook for 1-2 minutes until it no longer smells raw.

5. Slowly pour in the milk (and cream if using), whisking constantly to avoid lumps.

6. Continue stirring until the sauce thickens, then add Parmesan cheese, salt, pepper, and chili flakes. Stir until smooth.

7. Toss in the cooked pasta and coat it well in the sauce. Let simmer for 1-2 minutes.

8. Plate the pasta, top with sliced grilled chicken, and garnish with chopped parsley and extra Parmesan. Serve hot.

Notes

Use freshly grated Parmesan for the best melt and flavor in the sauce.

If reheating, add a splash of milk to loosen the sauce and restore creaminess.

For extra richness, substitute some milk with cream or add a bit of cream cheese.
