Ingredients

2 (5.2-ounce) packages Boursin garlic and fine herbs cheese, softened

8 ounces cream cheese, softened

0.5 cup sour cream

2 tablespoons mayonnaise

2 cloves garlic, finely minced

1 tablespoon fresh lemon juice

2 tablespoons olive oil, plus more for drizzling

0.25 teaspoon crushed red pepper flakes

0.25 teaspoon ground black pepper

0.25 teaspoon kosher salt, or to taste

1 tablespoon fresh thyme leaves, plus extra for garnish

1 French baguette, sliced into thin rounds

3 tablespoons olive oil

0.25 teaspoon sea salt or flaky salt


Instructions

1. Preheat the oven to 375°F (190°C). Lightly grease a small baking dish or oven-safe skillet with nonstick spray or a little olive oil.

2. Arrange the baguette slices in a single layer on a baking sheet. Brush both sides with olive oil and sprinkle lightly with sea salt or flaky salt.

3. Toast the baguette slices in the preheated oven for 8–10 minutes, flipping once halfway through, until they are crisp and golden around the edges. Set aside to cool slightly while you prepare the dip.

4. In a medium mixing bowl, combine the softened Boursin cheese, cream cheese, sour cream, and mayonnaise. Beat with a hand mixer or stir vigorously with a spatula until very smooth and well blended.

5. Add the minced garlic, lemon juice, 2 tablespoons olive oil, crushed red pepper flakes, ground black pepper, and kosher salt to the bowl. Stir until all of the seasonings are evenly distributed. Taste and adjust the salt, pepper, or lemon juice as desired.

6. Transfer the cheese mixture to the prepared baking dish and spread it into an even layer. Use the back of a spoon to create shallow swirls on the surface of the dip.

7. Drizzle a little extra olive oil over the top and sprinkle with a pinch of additional crushed red pepper flakes and black pepper if you like extra color and spice.

8. Bake the dip at 375°F (190°C) for 15–20 minutes, or until the edges are bubbling and the center is hot and creamy.

9. For a more deeply browned top, switch the oven to broil and broil the dip for 1–2 minutes, watching closely so it does not burn.

10. Remove the dish from the oven and let the dip stand for 5 minutes to cool slightly and thicken.

11. Sprinkle fresh thyme leaves over the top, add a final drizzle of olive oil, and serve the warm Boursin dip immediately with the toasted crostini for dipping.

Notes

For the best texture, be sure the Boursin and cream cheese are fully softened before mixing; using cold cheese can make the dip lumpy and harder to spread, and it may not bake as evenly.
