1/2 cup unsalted butter
3 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Preheat grill or oven to 400°F (200°C). Husk the corn and remove silks. Pat dry with paper towels.
2. In a bowl, melt butter. Add garlic, lemon juice, Dijon mustard, parsley, chives, red pepper flakes, smoked paprika, salt, and pepper. Stir to combine.
3. Brush the cowboy butter generously over each ear of corn, making sure to get between the kernels.
4. Place corn directly on grill grates or a lined baking sheet. Roast or grill for 20–25 minutes, turning occasionally, until tender and charred.
5. Brush with any remaining cowboy butter and garnish with more herbs if desired.
6. Serve hot and enjoy the buttery, spicy flavor in every bite!
Notes
Use smoked paprika for a deep, earthy flavor, or substitute with regular if needed.
Add grated Parmesan cheese for a creamy, salty finish.
For more spice, increase the red pepper flakes or add cayenne.
