Ingredients
2 1/4 cups all-purpose flour
1 cup unsalted butter, softened
3/4 cup ground almonds
1/2 cup powdered sugar
1 egg yolk
2 teaspoons vanilla extract
1/4 teaspoon salt
1 cup powdered sugar, for coating
1 packet vanilla sugar, for coating
Instructions
1. In a large bowl, cream the softened butter and powdered sugar until smooth and fluffy.
2. Mix in the egg yolk and vanilla extract until fully combined.
3. Add the flour, ground almonds, and salt, then mix just until a soft dough forms.
4. Wrap the dough and chill it in the refrigerator for about 30 minutes.
5. Preheat the oven to 350°F and line a baking sheet with parchment paper.
6. Scoop small portions of dough and roll each into a short rope with tapered ends.
7. Gently curve each piece into a crescent shape and place them on the prepared baking sheet.
8. Bake for 12 to 15 minutes, or until the edges are lightly golden.
9. Let the cookies cool for 5 minutes so they are easier to handle.
10. Toss or dust the warm cookies with the powdered sugar and vanilla sugar mixture.
11. Cool completely before storing or serving.
Notes
Do not overbake these cookies, or they will lose their tender texture and become too crisp instead of delicate.
