While it is not exactly a healthy snack, it is the kind of shareable dessert that makes any get together feel special.

Ingredients

1 box yellow cake mix

1/2 cup unsalted butter melted

16 oz cream cheese softened

1/2 cup granulated sugar

1/2 cup sour cream

1 large egg

1 teaspoon vanilla extract

2 cans strawberry pie filling 21 oz each

1 tablespoon lemon juice

Pinch salt

Whipped cream for serving

Fresh strawberries for garnish

Powdered sugar for dusting optional

Instructions

1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.

2. Spread the strawberry pie filling evenly in the bottom of the prepared pan and drizzle with lemon juice.

3. In a mixing bowl beat the softened cream cheese with the granulated sugar until smooth and creamy.

4. Add the sour cream, egg, vanilla extract and a pinch of salt to the cream cheese mixture and beat again until completely smooth.

5. Spoon the cheesecake mixture over the strawberry layer in dollops, then gently swirl it through the berries with a knife or spatula, leaving some pockets of strawberries showing.

6. Sprinkle the dry yellow cake mix evenly over the strawberry and cheesecake layers, covering the surface from edge to edge without stirring.

7. Slowly drizzle the melted butter over the dry cake mix, trying to moisten as much of the surface as possible.

8. Bake the dump cake for 35 to 40 minutes, or until the top is golden and the edges are bubbly and mostly set in the center.

9. Let the cake cool for at least 20 minutes so the layers can thicken before cutting into squares.

10. Serve warm or chilled with whipped cream, fresh strawberries and a light dusting of powdered sugar.

Notes

For the best texture do not stir the dry cake mix into the strawberry and cheesecake layers; simply sprinkle it evenly on top and drizzle the butter across the surface so you do not end up with dry patches or a gummy center.
