Ingredients
2.5 pounds Yukon Gold potatoes
2 large yellow onions
4 tablespoons unsalted butter
0.75 cup heavy cream
1.5 cups shredded Gruyère cheese
1 teaspoon fresh thyme leaves
1.25 teaspoons salt
0.5 teaspoon black pepper
2 tablespoons chopped chives
Instructions
1. Peel and chop potatoes into chunks, then boil in salted water until tender, about 15–20 minutes.
2. While potatoes cook, slice onions and caramelize in butter over medium-low heat for 30–40 minutes. Add thyme during the last 10 minutes.
